You’ve heard the phrase “eat the rainbow,” right? No, this doesn’t have to do with candy. One of the keys to having a balanced, healthy diet is getting in a large variety of vegetables in all different colors so that you get a wide array of vitamins and minerals. Unfortunately, this is easier said than done for some people who just can’t stomach vegetables no matter how hard they try, or maybe only like one or two varieties. To help you get in the greens without turning green, here are recipes that “hide” the vegetables, or at least mask their taste a bit.
