Okay, okay, so it doesn’t really look like a pancake… But that’s more due to my poor flipping skills.

For this week’s What I Ate Wednesday I’m going to share with you a recipe that I came up with last week when I was trying to just use up what was in my fridge, but now I’ve made several times because I liked it so much!

Remember that big batch of quinoa I made for meal prep last week? Well I hadn’t really used much of it, so I needed to start using it up, along with a bunch of eggs that I bought but didn’t use the way I’d intended.

I decided making a pancake with the quinoa and eggs could turn out well, and I added in some chopped up bell pepper to use it up before I left for the weekend.

I started by sautéing the peppers in a pan with olive oil:

While that was cooking, I mixed together 1/2 cup of quinoa, two eggs and then added about a tsp of paprika, as well as some ground pepper.

I put all the peppers in the center and the poured the egg and quinoa mixture over the top, allowing it to cook for a while (about 3-5 minutes)

Then… well. Then I tried to flip the pancake but that didn’t turn out so well. I let it cook on the other side for a little less than a minute and then plated it, topping the pancake with a  bit of sriracha.

Ta da! Sounds a little weird, but I really love the texture and the peppers add some veggies into the meal. You could even use any other kind of vegetable – I think chopped asparagus or broccoli would be great too.

Veggie Quinoa Pancake - Peace Love & Oats

Veggie Quinoa Pancake

Serves: 1  Cook Time: 15 min

Ingredients:

1 bell pepper (chopped)

1 tsp olive oil

1/2 cup quinoa

2 eggs

1 tsp paprika

salt and pepper to taste

Directions:

Put olive oil in pan and sautee chopped pepper until soft. Mix eggs, quinoa, paprika, salt and pepper in a separate bowl. Once peppers are cooked, pour egg mixture over peppers into the pan (be sure pan isn’t too hot or eggs will burn before cooked all the way through). Once pancake is formed and eggs are mostly cooked, attempt to flip…

Optional: After pouring into pan and cooking for a couple minutes, place pancake in oven at 350 for 5-10 minutes to bake (similar to a frittata).

 

I’ve eaten this for breakfast and dinner – so easy and quick to make! Oh and I should have mentioned this at the beginning of the post, but I’ll be recapping my time in AZ and the race tomorrow or Friday! Can’t decide if it would be weird to just skip Thursday Thoughts? Can’t remember the last time I didn’t do it!
