WIAW–Lately

Goooood morning everyone! Last night started my week of puppy sitting with Molly! I love having my little companion with me, and although I normally find going back and forth between sleeping at her apartment (yes, she has her own apartment!) and getting food and clothes from mine stressful, hopefully not actually having anywhere to be all week will make that easier…

Anyhoo, for this week’s What I Ate Wednesday I have foods that I’ve been eating lately, mostly including things from the Healthy Living Summit! If you’re new to WIAW, be sure to head over to Peas and Crayons to see what it’s all about!

First off, we had some GREAT sponsors at the Healthy Living Summit this year, including Blue Diamond! I’ve been eating a ton of almonds since I approached their table and they said, “Take as much as you want!”

I had to resist and only take one of each… Haha should have gotten more! Especially since I’m unemployed…

I tried their Salt ‘n Vinegar ones which have a VERY strong flavor, but I really liked it! I also ate the mocha ones, which were great too (love anything coffee flavored).

Another snack I ate traveling (and a second while studying) was this Rise Protein Bar. I was actually shocked that it’s such a tiny little bar and holds about 130 calories, but this paired with an apple kept me full for another couple hours until I got home!

When we went to Spoonriver for dinner on Friday night, I ordered the Ginger Lemongrass Rice Noodle Salad. Um. This was AMAZING. It had so many flavors and textures and was probably one of the best dishes I have ever ordered. I wish I could re-create this at home!

Breakfasts at HLS included oatmeal, fruit and occasionally eggs. I have to say the food wasn’t quite as good as last year, although last year included Love Grown Granola, so you can’t really beat that! Haha.

Lunch on Saturday was a buffet that feature fajitas, so I grabbed some salad and then fajita ingredients, including chicken, rice, beans, salsa, and sour cream:

And of course drinks! You don’t think drinking when you think Healthy Living? It’s good for your soul, I promise.

Food since I’ve returned home has been pretty simple: lots of cooked veggies and eggs:

And always oat bran or oatmeal for breakfast!
