WIAW–Lately

Good morning everyone! I’m in Kansas City and loving being home with my family! I had a great “girls night” with some of my and mom’s friends last night at La Bodega (a great tapas place) and I’m excited to see my little brother and an old friend today! Gotta get in as much as I can while I’m here!

For today’s What I At Wednesday, I thought I’d share some of the things I’ve been eating over the past few weeks (aka whatever I remembered to take a picture of). If you’re new to WIAW, head on over to Peas and Crayons to check it out!

For breakfast I’ve been mixing things up with more eggs and veggies, or carbs in the form of bananas or plantains.

And plenty of green juice!

Lunches and dinners have been a lot of whatever I manage to throw together, including snack plates, salads, mishmosh of whatever I have in my fridge (that’s a technical term), and salads from local food places.

Spiralized zucchini with tomato sauce, spinach, fresh corn (from the farmers market!) and Trader Joe’s chicken sausage:

And a LOT of “ice cream” for dessert and snacks made from my Viatmix. This one was pineapple, mango and strawberry. I make it with about 5 ice cubes, 1/2 cup almond milk, stevia, vanilla, a pinch of salt and xantam gum.

I also had a banana and almond butter sandwich, a fiji apple and some carrots both days during our lunch break of the Bar Exam:

And of course, after the exam, my drink of choice: gin and soda with lime!
