WIAW–Breakfast Style

As I mentioned last week, I love participating in What I Ate Wednesday and don’t plan on stopping. However, I felt like mixing things up a bit this week. I used to eat the same thing for breakfast every single day, at first it was oatmeal and yogurt for about a year, then a smoothie for several months, then just oatmeal (usually apple pie oats) for almost a year, then it was sweet potatoes with over easy eggs.

Now? I’ve finally broken out of my breakfast rut! I rarely eat the same thing two days in a row, I make whatever I’m craving that morning, whether it’s something savory, sweet oats, or basically whatever I have in my refrigerator that day.

So for today’s What I Ate Wednesday, I’ll be showing you some of the breakfasts I’ve been eating over the past week or two! If you’re new to WIAW, head over to Peas and Crayons to see what it’s all about!

Gina’s Breakfast Cookie Dough Cereal. Except for mine, I actually cooked the oats first and added a tsp of cocoa powder (along with 1 scoop sunwarrior protein) then topped with almond milk and 1/2 banana.

1 over easy egg + 2 egg whites, sautéed greens and shitake mushrooms, plus Udi’s bread with avocado (mashed with salt & pepper).

Apple Cinnamon Amaranth

Classic banana oatmeal, made with 1/2 banana, 1 scoop sunwarrior protein and 1 glob of peanut butter on top!

Has anyone tried this new blueberry oatmeal from Starbucks? I love it! The toppings are Agave syrup, blueberries, and a mix of dried nuts, seeds and fruit. Definitely a nice change up from their classic and the nutrition stats on the toppings are a bit better too.

And finally, yesterday I tried Whipped Plantain Coconut Yogurt from Carrots N Cake. It tasted pretty good, but not sure I’ll make it again. I used coconut extract since I didn’t have any coconut.
