WIAW–Weekend + Oats Recipe!

Good morning and happy Wednesday!

We’ve made it halfway through the week and over halfway through February! Where did the time go!? Ah well, anyway since today is Wednesday that means its time for another WIAW post! If you’re new to What I Ate Wednesday, it’s a collection of blogger’s who post one full day of eats. Today’s WIAW post comes from Saturday! It was a random day of small meals/snacking and I thought it would be great to show how I eat on the weekends, which is much less meal-oriented than a weekday.

My morning started out with a big bowl of oatmeal – a new recipe for you all!

Peanut Butter Cup Oatmeal

Ingredients

1/2 cup oatmeal

1/2 cup almond milk

1/2 cup water (+ 1/4 cup later)

1/2 T ground flax (optional)

1/2 T Hershey Special Dark Cocoa

1 scoop Sunwarrior Vanilla Protein Powder

1-2 packet(s) stevia

Optional1 T peanut flour

1 T peanut butter (topping)

Directions

On the stove top, heat up the oatmeal, almond milk, water and ground flax until it boils. Turn off heat and cover. You can skip this step, but I prefer the mushy texture that this creates by letting the oatmeal really soak up all the water.

After about 20 minutes, add more water (about 1/4 cup) and turn the heat back on. Add cocoa powder and stevia and heat. Then, when there’s still enough liquid left to soak up the protein powder, add the protein powder (and peanut flour if you have it).

Pour into a bowl, top with Peanut Butter and enjoy!

This was a great way to get a morning chocolate and peanut butter fix!

After breakfast, I did a lot of school work and cleaning around my apartment. After about 3 hours of this I decided I needed to hit the gym for my run, but I knew I was going to be hungry again soon and I hate running hungry, so I grabbed a piece of Udi’s bread, topped it with 1/4 tsp melted coconut oil, then stevia and cinnamon. Haha my version of cinnamon toast with what I had in my apartment.

When I got home from my run and Walmart Neighborhood Market for a few necessities I whipped up a smoothie with frozen peaches, spinach and protein powder, topped with “chocolate sauce” made with almond milk, stevia and cocoa powder.

A little while later I was ready for a real lunch, so I threw together some crockpot shredded chicken with roasted zucchini, spaghetti squash and marinara sauce:

After that, it was even moooore studying! Haha I got a lot of reading done on Saturday but it was pretty painful. I had plans to go to Whole Foods with my sister in law but she wasn’t able to go until a little after six. I knew I wanted to pick up dinner from Whole Foods but I didn’t want to show up hungry (hungry grocery shopping is dangerous…) so I had a sliced up bell pepper dipped in tahini.

I got the hot bar from Whole Foods, although I completely forgot to take a picture… It did, however, look incredibly similar to this:

A while after dinner I ended up heading out to meet up a friend for drinks, and had a few of these:

Not the healthiest of things I could have done, but life is about balance, right? I ended up getting to bed around 2am… Haha not a typical Saturday for grandma over here but I’m sure glad I went out of my comfort zone.
