WIAW–First Day of 2013

Happy Wednesday! I hope you all had a great first day of 2013! I had a nice, relaxing day at home – lots of snow shoveling, a quick upper body strength workout, helping my mom use her new slow cooker and taking my friend’s dog out for a walk!

I thought for this week it would be fun to do What I Ate Wednesday on the first day of 2013! If you’re new to WIAW, head over to Peas and Crayons to find out what it’s all about!

My day started out with a baked (microwaved…) sweet potato with an egg and TONS of hummus. Sadly I forgot to take a picture, but here’s my plate afterwards (including my peppermint tea bag).

I also snacked on some M&Ms in the morning. My mom leaves them out in this dish… it’s so dangerous.

After my workout and snow shoveling I wasn’t too hungry but thought I should eat, so I threw together a bowl of puffed corn, sliced strawberries, blueberries and almond milk.

I then did some work and went to walk Penny, after getting home I was HUNGRY and ready for lunch part 2. I sliced up a bell pepper which I dipped in hummus (2 flavors: original and sundried tomato) and then had some lettuce with tzatziki sauce on the side because I hadn’t eaten anything green all day!

Later I went back for some rice chips to eat with more hummus! (this x2!)

I also had an Udi’s Chocolate Chip Cookie for dessert. Seriously, these things were SO GOOD! They lasted over a week and each cookie still tasted fresh and not dried up like most packaged cookies.

For dinner, my mom wanted to try out her new slow cooker, so we followed a recipe from the book that came with it and made roasted chicken with root vegetables. The chicken was great but the veggies were a bit burnt. Here’s my 1st plate and I went back for a bit more chicken and more veggies!

For dessert, I had vanilla ice cream with fresh strawberries (plus some more berries afterwards).

Delicious!
