WIAW–A Case of the Mondays

Hey everyone! I hope you’re all having a good week so far. Mine is pretty busy, I had a test yesterday, a presentation tomorrow, an exciting blogger event tonight, and 3 physical therapy appointments!

Since I’m a little strapped for time, we’re going to do a somewhat abbreviated version of WIAW. If you’re new to What I Ate Wednesday, head over to Peas and Crayons to see what it’s all about!

Today’s WIAW comes from Monday, which turned out to be a busy day! I decided to skip my scheduled workout and take a rest day, so my morning started with some devotions and tea:

Then for breakfast I had a microwaved sweet potato with 2 over easy eggs, avocado and sriracha. This has pretty much been my breakfast for weeks now… Loving it.

Right after my morning class, I hung around and chatting with a couple girls and got a little studying done. I snacked on a Health Warrior Chia Bar, which I really liked! I didn’t like their chocolate peanut butter flavor, but this one was really good!

I didn’t have time to head home for lunch after class, so I stopped at a Starbucks right by my physical therapist and had oatmeal with a packet of nuts while I did some more studying.

I was really hungry when I got home from physical therapy, so I made some tea and snacked on an apple, while I had a kabocha squash in the oven!

I chopped it up, sprinkled it with cinnamon and roasted it at 450 degrees for 45 minutes. I ate it with sriracha… this is becoming an addiction. This was part 2 of my afternoon snack:

Dark chocolate for my sweet tooth.

For dinner I had some spaghetti squash with marinara sauce, chicken sausage and zucchini. I forgot to take a picture so I used an old one where I didn’t have zucchini. My drawing totally looks real… right?

And for dessert: protein ice cream!
