Sunday Funday

It’s a new week! As much as I love the weekend, I’m glad it’s a new week. Last week was rough for me, so I’m ready for a fresh start!

Saturday I had a CPR/First Aid course out in the suburbs during the afternoon/evening because we have to certified for Girls On the Run. We were done at 8, and then I had my first real Chicago traffic experience. I’ve definitely hit traffic before, but nothing like this… I left at 8pm and should have gotten back by 8:45. I got back to my brother’s at 9:30… yay.

Yesterday, however, was a pretty good day! As I mentioned, I decided to skip my 14 mile run all together, so I got up and did some yoga, had breakfast, got some reading done and then I offered to take Molly on a walk! Here’s our great adventure:

Ready to go!

Hunting ducks:

So excited we got slobber on our nose!

Hunting squirrels

So exhausted!

After our walk I hit up the grocery store to get supplies for this week’s meals! I found some great recipes off Dashing Dish. First I made her Apple Bacon Chicken Salad, and multiplied the recipe by 4 for all 4 days of the week that I need to bring lunch to school.

Then I made her Summer Squash Crustless Quiche for my 3 dinners at home, Monday, Tuesday and Wednesday. The recipe makes 6 servings, but since each serving is under 100 calories, I’m going to have 2 servings per meal plus something like a salad (haha you’ll see on my WIAW!).

After cooking, I hit up Starbucks to get some reading done, and I copied Chelsey’s instagram photo by ordering an ice coffee with 1 pump pumpkin spice! It was so good!

After that I went to Target, had dinner and now I’m writing this post! While watching the new season of America’s Next Top Model… Gotta catch up on the important things.

**Edited to add: No GOTR practice today… Chicago Public School teachers are on strike so no school today. 🙁  (and this is in no way  a statement on their strike, I’m just sad I don’t get to start coaching today and meet my girls!)

What did you do this weekend?

Have you tried any new recipes lately?
