Pancakes? Yes, Please.

Hey everyone! I hope you are all having a great weekend! I am so far!

Yesterday I started out with a 7 mile run with my CARA training group. It. Was. Rough. My legs were dying from my run and spin class on Thursday (more on that on WIAW…) and walking around the Chicago Taste with the other interns on Friday. Either way, it was humid, the pacers were going too fast, and I was BEAT. Haha but I survived! Excuses, excuses.

Anyway, I had much to look forward to! I headed home, hopped in the shower, and then was on my way out to the suburbs! Why?? I had a doctor’s appointment.

Isn’t that EXCITING?!?!??

Okay, okay. I had something WAY more exciting to do beforehand! I was meeting Chelsey for brunch!! She knew a great brunch place and when she looked it up to send to me, she realized they had a GLUTEN FREE MENU.

Lots of restaurants have gluten free menus nowadays, but usually it’s just the regular menu items they have that don’t have gluten, like salads without gluten ingredients, or the salmon with steamed asparagus, etc. Well this was a REAL gluten free menu! They had gluten free pancakes, toast, and french toast!!!!! Needless to say, we were pretty excited.

I made it out to Café Miele in Orland Park, IL and Chelsey had just grabbed us a table. I was so confused on what to order, there were too many choices! Chelsey made the smart point that we usually have zero choices that we aren’t used to so many options! This was a good problem to have. We both were dying for the pancakes, but wanted some “real” breakfast too, so we both ended up ordering egg white omelets with veggies and then pancakes in place of toast.

Chelsey was smart and ate most of her omelet, saving a good bit of her second pancake to take home. I, on the other hand, abandoned the omelet early on and went after those pancakes! They were so fluffy! I hadn’t had really pancakes in probably years and to be sitting there, in a restaurant where SOMEONE ELSE made me some gluten free pancakes was thrilling and mind boggling all at the same time. Seriously, I kept waiting for someone to pinch me.

You may think I sound insane, but if you’re gluten free then you totally get me.

Today I’m off to meet another friend for brunch this morning (no GF pancakes…) and then go to COSTCO with my cousin! You have no idea how excited I am for Costco. And, they’re may be some froyo thrown in there afterwards. Dream day.
