Mother’s Day Weekend!

Hey everyone! Happy Monday! Although I’m not about to start of on my usual Loooooong Mondays, I still love to think of Monday as the start of a new week, so we should all go into it with a great attitude:

I crafted from Pinterest, found a health food store, and met my friend for froyo!

I hope you all had a great mother’s day, especially any moms reading out there! I think my mom did! We started out the day by my dad making omelets for everyone! My mom loves them and they’re something we rarely have.

After breakfast most everyone did yard work while I went on a long walk. Oops, totally missed the yard work…

Then my mom took me to go get new running shoes! I’d been in dire need of some over the past couple weeks so I’m excited that I finally got some new ones! I’d been running in a pair of Saucony XT 900s, and they treated me very well! However, I am always up for a new shoe, so I went in very open minded. I ended up trying on several shoes, including the new model of my Saucony’s. I ended up not liking that shoe, but I really liked the Asics GT2160s, which I ended up getting. I have a narrow foot and these fit really well:

I’m supposed to try them out on a treadmill first so I can return them if I need to, so I’m excited to see how they feel running!

For dinner we had my grandparents over. We had some cocktails out on our back patio, and then served dinner buffet-style and ate out there as well. For dinner we had brisket, Cheezy Vegan Mushroom Quinoa, fruit salad and then cookies (which I couldn’t eat…) for dessert. Don’t worry, I had some ice cream.

The quinoa dish is a recipe that I found on Anne’s blog: Fannetastic Food. I thought it looked perfect and was similar to a dish my mom makes, which she calls Greens Rice. Everyone seemed to enjoy it! Here’s my plate, and I definitely went back for seconds.

It was a really nice evening with my family and I’m so glad the weather was just perfect for sitting outside! No bugs and not too cold! I always get cold… Haha.

So a happy mothers day to my mom and grandmother, as well as all other moms out there!! Hope you all had a great day!
