WIAW–Rocking Out the Long Day

Hey everyone! I hope you are all having a great week! Things are going well for me, although school is really starting to pick up so I’m getting a little overwhelmed! Here’s some motivation for anyone else feeling overwhelmed by school, work, family or anything!

So today is Wednesday and I’m sure you’ve learned by now that this means another installment of What I Ate Wednesday! If you’ve never heard of WIAW, head over to Peas and Crayons and learn a little about WIAW, as well as check out other blogs that are participating!

I woke up bright and early at 5:05am and headed straight to the gym to complete a workout for Tina’s Best Body Bootcamp. Monday was a push strength workout with drop sets. Never heard of them? Neither had I! You start your set by doing 8 reps, which means that you use a higher weight than normal. When you’ve finished your 8, drop to a lower weight and then continue to do the move to exhaustion! I had a lot of fun with this workout, it was great to try something new!

When I got home I hit the shower and packed up my stuff. I was already feeling hungry so I munched on a rice cake while I scrambled out the door!

For breakfast I’d packed up some overnight oats I made the night before! I was out of a lot of things so I had to improvise. In the mix: 1/3 C Oats, 1/3 C Flax milk, 1/3 cup plain Greek yogurt, 1 T chia seeds, 1 packet stevia, a little vanilla and some sliced mango!

A few hours later I had a mid-morning snack to tide me over until lunch. I forgot to take a picture because I was pretty hungry… But it was an apple and then a rice cake cut in half and “sandwiched” with hummus and avocado. A liiiiiiitle soggy after being in my bag half the day, but I’m glad I have a new snack option a shot!

On Mondays I already pack 2 snacks and breakfast, so I like to give myself a treat by picking something up! Today I decided to end the Chipotle streak and head to I Dream of Falafel, a local Chicago chain.

I got their salad with Raita sauce, tons of veggies and falafel! I normally get chicken, but I thought I would mix it up this time and I LOVED the falafel! So good!

During my last class I had a couple snacks to tide me over: carrot sticks and some of my protein bars I made the other day. Turns out I should have cooked the bars about 5 minutes longer because they were a bit mushy… Still good though! I loved having the apple chunks in there!

I also had a chai tea, and plenty of water!

When I got home I was pretty hungry so I wanted something quick and easy (plus my kitchen was a mess…) so I heated up one of Amy’s Gluten Free Burritos! I’d seen Amy’s products all over blogs and at Whole Foods, so I decided to buy a burrito for when I was in the mood for Mexican. I was surprised that it was beans, cheese and the tortilla and only 260 calories!

The burrito was pretty good, but nothing amazing. I’d rather make something myself like this, but it was great for having to do zero prep work. I also think it would have been better if I’d cooked it in the oven, but that was supposed to take 40-45 minutes, and that would have defeated the purpose of a quick dinner!

For a snack after dinner I decided to try a new popcorn trick I’d heard of: just put kernels in a brown paper bag and put it in the microwave! Sadly it didn’t work out too well for me… I got very little popcorn but had to pull it out because the bag was burning! I think my issue was that I didn’t have any lunch sack size bags, and I improvised but cutting down a larger brown paper bag.

I also had some yogurt mixed with stevia and vanilla! I actually had a little over 2 of the yogurt pictured (HAD to finish of the tub…) .
