Happy Wednesday everyone! So Jenn isn’t doing WIAW today, but it’s a good thing because I completely forgot to take pictures of anything other than a morning snack and my dinner! I can tell you what I had though!

Yesterday morning I’d intended to do 6 miles, but the bottom of my heel is KILLING me, so after jogging for about 20 seconds I had to give up. I ended up doing 6 miles on the elliptical instead. When I got home I made a breakfast of Udi’s toast with almond butter, and a bowl of pumpkin mixed with a scoop of chocolate protein powder, truvia, PB2 powder, and some raisins. I’d also had half a banana with peanut butter before I headed to the gym!

After breakfast, I decided to head to the Roasterie to get a café au lait with almond milk and finish reading a book that I’d been reading since break started. Clementine to snack on!

Born to Run is a MUST READ for anyone who likes running! I am very easily influenced so I have already tried the chia drink they talk about and might make pinole (made from corn meal) this week… I also am currently researching minimalist shoes and have decided that one of my life goals is to run the Pikes Peak Marathon in Colorado Springs, which is a trail marathon.

The book had a great main story that you follow, interjected with other stories of various runners. It makes me just want to run. All the time. I highly recommend this book! Thank you to my cousin, Allie, for giving it to me for my birthday!

And no, I don’t wear make up if I’m not seeing anyone other than family or strangers… I’m becoming more and more of a tomboy. And I didn’t wash my hair… Winning.

For lunch I made a salad out of just about any veggies we had in our fridge: spinach, bibb lettuce, orange and yellow bell peppers, artichoke, black olives, and Annie’s Lite Honey Mustard Dressing. I also had a slice of GF bread with hummus and a little bit of Greek yogurt with chocolate protein powder mixed in. Oh, and a sugar cookie, of course. It was the last one…

For dinner, my mom and I used the cookbook she gave me for Christmas as inspiration. It’s called Fresh From Elizabeth’s Kitchen – Gluten Free and Allergy Free Recipes for Healthy, Delicious Meals.

I made the cornbread from the cookbook and it turned out delicious! I actually kept going back to it and sneaking bites all evening. I normally don’t like cornbread because I think it’s too dry, but this was so good!

I also roasted some veggies as a side: asparagus, sweet potato and carrots. Just tossed it in the oven for 40 minutes at 350F. My mom and I did wish we’d added some olive oil and salt… My fault. I got home late and wanted to get them in the oven ASAP so I could start on the corn bread.

My mom also grilled some chicken, but before she put it on the grill we used a sauce on the chicken “inspired” by a recipe in the book for Pomegranate Chipotle BBQ Sauce . In other words we didn’t have all the ingredients so we improvised… But it worked out! I thought it was good, and my dad literally took the leftover sauce and started dipping his vegetables in it…
