Hectic Holiday Travel Weekend!

Good morning from beautiful Kansas City! So far my winter break has been semi-hectic! Lots of things to do before I headed home and then lots of family time when I got here. However any activities other than studying are fine by me!

Before I left, I headed over to my brother and sister-in-law’s apartment, where we ordered carry out and decorated a gingerbread house! Okay, Lauren and I decorated the gingerbread house, Molly tried to eat it, and Harrison watched football.

The next morning it was off to the airport! I had a quick breakfast of a piece of Udi’s toast with PB, egg whites with Chia seeds, and then an apple that I had to eat at the airport!

My flight was a little delayed, but my dad was there waiting to pick me up! We grabbed my bag and headed home, where my Mom was watching football: Kansas City Chiefs v. Green Bay Packers.

Ever heard of the Packers and their quarterback, Aaron Rodgers? Apparently they are the best team in the history of football, and he’s an amazing quarterback.

WRONG.

Why? BECAUSE WE BEAT THEM!!!!!

I rarely watch a whole football game, but I could not tear myself away from this one! The Chiefs don’t really have the best record… so we definitely didn’t expect to win, but we kept our lead for the whole game and beat them, killing their undefeated streak!

It was a wonderful moment.

You know what else is wonderful? This Banana Bread Protein Muffin that I made! And yes, I was browsing through SELF magazine featuring Jillian Michaels while eating it. LOVE her.

Banana Bread Protein Muffin

Ingredients:

1 T Sunwarrior Vanilla Protein Powder

1 T Gluten Free Baking Powder

1 packet Truvia

1/4 tsp baking powder

1/4 banana

approx 1 and 1/2 T almond milk

cinnamon or  nutmeg to taste

Directions:

Mash up the banana and microwave it for about 15 seconds. In a separate container, mix together all dry ingredients. Then mix in the banana and almond milk. You may need more almond milk. The consistency should be a very, very thick liquid. Microwave for 35-40 seconds. If it’s not done enough, stick it back in for another 10 seconds, depends on your microwave.

Other great mix-ins could be chocolate chips or walnuts!

When was the last time you decorated a gingerbread house? I hadn’t done it since I was probably 8 years old!
