WIAW–Back to Class

Good Morning!!! Today’s What I Ate Wednesday includes all my food from Monday! If you haven’t heard of WIAW, be sure to check it out on Peas and Crayons. I love it because it gives me great new ideas, and I find new blogs to follow! Not that I don’t already follow enough… Haha.

My Monday morning started out with a 7 mile run, and then a frantic scramble to finish up some reading that I didn’t realize I had! Oops. The reading needed some coffee with almond milk. I have a feeling you all will be seeing a lot of coffee on this blog for the next three weeks…

For breakfast, I was craving some greens. I hadn’t eaten any vegetables yesterday and just desperately wanted some veggies! I decided to make my first smoothie in a long time and experimented with tons of greens.

In the mix: 1 scoop vanilla protein powder, 1 packet truvia, 1/2 cup almond milk, 1/2 frozen banana, 1 cup spinach, 2 cups kale, 1/4 tsp vanilla and 1/4 tsp xantham gum. I realized mid-smoothie making that I didn’t have anything to top it with, so I microwaved 1/4 cup oats, 1/4 cup almond milk and a bit of water. I added cinnamon, and ta da!

It was pretty chilly Monday and I needed something to warm me up, so I got of the bus a couple blocks early and hit up the Argo Tea inside Willis Tower. I got a Masala Chai with an almond milk topper (um, didn’t know that was an option!?!?). They had gotten all set up for the holidays and the decorations put me in a good mood!

For lunch I had the cabbage and lentil soup that I made on Sunday and packed up for the week. I got the recipe from Chelsey on Clean Eating Chelsey. On the side, I had a slice of Udi’s bread. I really like their bread! It almost tasted like it had butter on it! No idea how… but I liked it.

The soup was so good, I couldn’t wait to eat it and actually burnt my tongue pretty badly! It sill hurts, even now! I should learn my lesson…

For an afternoon snack, I had an apple sliced up, and a Pure bar.

Lucky, lucky me, my last class was cancelled! Normally I have to pack lunch AND dinner on Mondays, but my teacher who teaches my late class cancelled for both Monday and Wednesday this week, so I got to go home early!

For dinner I had more of the soup (too good…). I realize this makes for a boring WIAW, but make this soup, and then try and tell me that I’m crazy.

And then for dessert, I made a sampler! Haha, I know, I’m a little crazy. I made a Cinnamon Protein Cupcake, then I had about 1/3 cup greek yogurt with PB flour and truvia mixed in, and finally about 1/2 cup canned pumpkin with almond milk, truvia, cinnamon and nutmeg mixed in. Aaaaand some chocolate chips, of course.

Totally my style of dessert! I can never make up my mind on just one thing!

Do you ever put together “sampler” platters because you just want everything??
