What I Ate Wednesday

Just like last week, this is what I ACTUALLY ate on Wednesday! How exciting is that?!? I can feel your enthusiasm.

For those of you who haven’t seen this before, WIAW was put together by Peas and Crayons (click photo above for link) and is meant to be a fun way to see what other bloggers eat and get some interesting ideas! I love clicking around the site – I get great ideas for snacks and meals to pack for school that I never would have thought of!

Today I had a doctor’s appointment in the morning and then class all day, so I had to make today a rest day! Although after my 7 mile run yesterday, my legs are in no way upset about this scheduling issue…

For breakfast, I had some serious banana oats! I made 1/3 cup oats with 1/2 cup water and 1/3 cup almond milk. I added 1/2 T flax and mixed in 1/2 banana near the end of cooking. Then I topped it with the other half of the banana and a scoop of PB!

Lunch and Dinner both had to be brought to school, since I don’t get home until 8:30!

For lunch, I packed my current obsession (and way to use up all my butternut squash!). It’s a salad topped with about 1 cup (or so…) of butternut squash, some roasted brussel sprouts, steamed squash, beets, and little bit of avocado!

I also packed a little tupperware of Annie’s Lite Ginger dressing to go on top! It’s soooo delicious! I also love her honey mustard!

And for snacks, I packed a sliced Honeycrisp Apple, and a Cinnamon Raisin flavored GNU bar.

These bars are delicious, only 130 calories and each contain 12G of Fiber, which is 48% of your daily value! Haha, now that’s some serious fiber! They contain no Trans fat, no High Fructose Corn Syrup and nothing artificial. I’ve tried all their flavors and cinnamon raisin is one of my favorites, but I also love their banana one and their chocolate brownie!

I had to rush off to my doctor’s appointment, so I didn’t have a chance to figure out what to pack for dinner, but there’s a Subway right next to my building, so I have a feeling I’ll be stopping in there for a turkey sandwich! I’m soooo in the mood! Haha.

And when I get home, one of Chocolate Covered Katie’s Single Lady Cookies for dessert! I’ve tried her peanut butter one (which was delicious!) but I might give chocolate chip a try if I’m in the mood!
