This week was stressful, and I cannot even express how excited I am that it’s the weekend! (well for me it’s the weekend, no class Fridays!).
I spent a good chunk of last weekend trying to get all my schoolwork done for the week so it wouldn’t be so overwhelming – but it still was! I had a legal writing assignment due that I thought was due in 2 weeks (don’t worry – rocked it out!). I had an interview that I had intended to cancel but was told I was “not allowed to” by the school. This just upset me because I wasn’t very interested in working there and I felt like I was wasting everyone’s time! And it turns out the 100 page chapter I read for one class was the wrong chapter… winning.

Haha, ok, maybe I wasn’t quite as bad as this cat, but I was a cranky mess this week! Part of my stress is caused by the fact that when I feel overwhelmed with everything I have to do, I can’t focus enough to get anything done. My mind is constantly racing and I can’t focus on anything! I try taking some deep breaths, or changing the location of where I’m working (i.e. going to a coffee shop), but sometimes it just doesn’t help.
However, I realized this week that part of why I feel like I can’t concentrate is because of the foods that I’m eating. I learned from my nutritionist last week that carbs and healthy fats are important to our energy levels and our concentration. Our brains need healthy fats to function! Although I’ve been slowly trying to work these things back into my diet, I definitely need to step it up a notch, especially with healthy fats! It’s amazing how much the nutrients we eat (or don’t eat) affect our daily lives.
What kinds of foods do you think help you concentrate and give you energy to make it through the day? What do you do when you are feeling overwhelmed and stressed?
However, it’s time to put this past week behind me and look forward to the weekend! This morning has been nice and relaxing: since I don’t have class to scramble to, I got to get up, be lazy, and enjoy a delicious breakfast before my 9:30am Power Sculpt class, which is yoga but with weights!
For breakfast, I had decided last night to finally give Katie’s Voluminous Oatmeal trick a try. When I pulled them out of the fridge this morning, they looked like a rubbery mess….
Perhaps I need to add more water next time? I definitely could not have eaten them cold, like Katie does, but I managed to make them work. I added in some cinnamon, a little applesauce, and about an extra 1/4 cup of almond milk and microwaved it for a bit. I also threw in some raisins and ended up having a nice big bowl of oats to enjoy! I also had my last fig with some PB; LOVE those figs!
Now it’s time for some much needed yoga, and then lunch with my cousin Allie and my cousin Michele! So excited to see them and get the weekend started!
