Figalicious

You would think after going to the grocery store yesterday that I’d have tons of options for dinner! Think again. I only bought some staples that I was missing, such as milk, yogurt, fruit, cottage cheese, etc. I did not, however, buy anything to supply a recipe. I thought, oh the week is over, I’ll just figure that out later. Problem: nothing for dinner!
I still had a ton of veggies left from the week, so that’s what I made! An Italian-style
I combined a bunch of Kale, some eggplant, sweet onion and green onion (all the veggies I had left…), and then mixed them up with a little bit of olive oil, garlic powder, a pinch of salt and some oregano.

Then I steamed the veggies in the microwave for about 3 minutes. I forgot to add a little water to the bowl, so they came out a bit drier than I would have liked. I topped it off with some marinara sauce and ta da! Italian veggie scramble!

I also realized that I had zero protein to add to this scramble, so I snacked on some Babybel cheese while making dinner! Note to self: buy some proteins!

I couldn’t stop thinking about how delicious that fig was this morning, I so I had to have them for dessert! I melted 1 dark chocolate Hershey’s kiss and mixed it with a little bit of almond milk and some Chocolate PB2 powder to drizzle over the figs!

Definitely went back for a second one of these!!! Absolutely amazing. It was a mix of chocolate and peanut butter flavor with the sweet fig and I highly recommend it! To replace the PB2 powder, just add a little bit of peanut butter when you’re melting your chocolate.

Today I might have lunch with my cousin and then I’m going to hang out with my brother and sister-in-law tonight before they head out of town for the long weekend! Oh yea, and probably some school work in there too…
